LOL - 50k to 1 Lakh? This eatery owner won't even know what chef means! The owner comes in at 530 AM and toils until 1030 PM to establish the business and he sure doesn't have the means to pay his cooks by the hour.
Is it one of those places where dogs were after you?

Yes, one of those eateries with no doors, no outside walls but with some seating inside! I guess non-dog air-conditioned restaurants employ chefs and pay them handily, but they charge one-half of typical American rates.

What happeend in Punjab is typical of what happens in a society that grows from poor to rich (like America). Earlier generation worked hard, brought in green revolution and became rich. Their kids never had to work hard, got into drugs and wanted to emigrate with the new found money. Remember SRK's son?

Along with KT the rural life took a downturn. At the same time MP and other states caught up.

Madhya Pradesh emerged as the state with the highest growth rate in agriculture. Long clubbed with the so-called BIMARU group of poor northern, central and eastern states, MP successfully broke ranks to set a scorching pace of growth, which has been unparalleled in the past quarter-century.

Punjab is still #1 in agriculture due to multiple rivers and rich soil/canal network but it has many issues in the countryside. Punjabis like Gujjus always emigrated to greener pastures for the past 100+ years. Earliest settlers in CA (1900 AD) were from Punjab who started the Gadar Movement in SF.

I am surprised you did not include the insurgency that started in the 80s as a contributing factor for Punjab's downfall. Not just Punjabis and Gujjus, other Indians like Tamils have all wanted to get out and latched onto the opportunities provided even though it was for manual labor in most cases.

This is a big blind spot for many Indians. Indians love to say things like, "Maids are available easily in India, therefore India is better than US".

Excuse me, whole of India has maids? Including the maids themselves? Likewise - do drivers have their own drivers? Swiggy delivery guys get swiggy delivered to their homes?

Its almost as if this army of support staff dont even count as Indians in the minds of some Indians when making such assertions.

Nonsense! Whole world loves cheap labor. The t-shirt, Nike shoes and iPhones you wear were made using cheap labor in Vietnam/BD/China where workers are paid $5/day. If not for those cheap labor you would be walking naked, wont be able to afford if these stuff were Made in America for $30/hr.

It is a reality whethere one likes it or want to act like a Mahatma. You need poor people for rich to enjoy their life. European powers got rich by exploiting people in Asia/Africa. It is almost impossible for everyone to be rich which is what is happening in Bay Area and getting help/maid is so tough/expensive unless you are making 2-3 mil a year.

What you said it's obvious! But what I was taking exception was to the comment that, "well, everyone in Punjab owns land'!
BTW, Americans or for that matter anyone else was roaming naked, before all the global trade started. They were just living like we used to do growing up, getting new clothes only for occasions like Diwali, family wedding etc..,

No one is acting like a Mahatma. European powers also used Asia and Africa. But at least they treat each other right. And when they say 'Europe' or America is rich, its an accurate statement. India is not rich. Unless you make a separate nation out of India consisting only of the maid employing class.

Big difference in outsourcing vs your own country providing the cheap labor. In former case, you can still make statements like "everyone in Luxembourg is well off". You cannot make statements like "everyone in India is rich" without denying the existence of 90% of Indians.

This is what I have been saying all this while; Lots of Indians are very rich and have resources to fund 40L-1cr to go abroad. It is fomo. That's all. Grass is green in the US.
